It may come as a surprise to know this wine is made from Merlot grapes only. When pressed the grape juice is drawn off and fermented in the same way white wine is produced rather than in the typical red wine style Merlot is known for. Bio-dynamic methods are used, and the wine is also vegan. The resulting style is bone dry with typically plum flavours, aromas of redcurrant and pepper with great acidity. Try with shellfish or grilled squid.
