Natural yeasts used during fermentation, with second fermentation in bottle resting on lees 9-12 months prior to disgorging, Known as the champagne method. This wine has the richness of a vintage Champagne and with the bonus of being a natural, organic wine enriching the pure flavour from the grape juice. Perfect with Lobster or as an aperitif.
